SPRING, Oh How I Love It...




The Beautiful sounds of birds, The fresh air, The warm sunny days with a breeze, The sweet babies being born, The Atonement of our Savior. The Spring days are so wonderful. This by far is my favorite time of the year. I do love the summer too, but spring time is just so new to me each year.
I hope that all of us can have the most wonderful time this spring season.

The Bake Off!!

This was my example cake. I copied it from this picture.
I think that my cake turned out pretty good. It was so much fun to
make. For the first time I made Chocolate fondant and that was cool
to make and yummy.
We also made these chocolate covered cookies. The kids loved to help, and kept on licking there chocolately fingers. Yum!! Those all went fast at the bake off.

I received 2nd place!! Not to shabby!! We all had lots of fun!!

Luscious Lasagna

Ok, This was my very first time making Lasagna. And I was kind of scared.
I found the recipe online and it sounded yummy. It is called Cottage Cheese Lasagna.

What you do first is you make the sauce and let it sit while you cook your noodles.
When your noodles are done, as well as your sauce then you just put it all together in layers.
I used two different cheese's then what the recipe called for.
All I had was romano cheese, monterey jack cheese, And of course cottage cheese.
So then I just layered it...
first I put oil down on the bottom of the pan .
Then I started to layer it by putting the pasta down, then the sauce, then the cottage cheese and topping it with the monterey jack. And so on...
When your don layering it it should look like this.
Then stick it in the oven and wait for that Heavenly smell.

I have to say....It turned out so yummy. But of course my children didn't really like it. But that's ok there taste buds aren't yet developed. More for me. I was a little unsure about making it but no worries. It was kind of a long process though with cooking it and putting it together. Just make sure that you have a couple of hours on your hands. And also make it in two dishes or double the recipe so that you can freeze one and have one for later. Next time I will do that.
Here is the recipe that I used....

Cottage Cheese Lasagna
1(16 oz.) can whole tomatoes
1(15 oz.) can tomato sauce
1 1/2 Tablespoons dried oregano leaves
1 bay leaf
1/4 teaspoon ground fennel seeds
1 teaspoon dried basil leaves
1 onion, chopped (optional)
2 garlic cloves, crushed
1 tablespoon vegetable oil
1 pound ground beef
8 oz. lasagna noodles
12 oz. mozzarella cheese
1/4 cup (1 oz. ) parmesan cheese
1 cup (8 oz.) cottage cheese


Makes 8 servings
Preheat oven to 350*F

In a sauce pan on medium heat, simmer the whole tomatoes, tomato sauce, oregano, bay leaf, fennel, and the basil.

In a skillet, saute' the onions and the garlic in the oil, until golden brown.
Add ground beef and cook until browned; drain.
Add the tomato sauce into the beef mixture and simmer for 1 hour.
Prepare lasagna noodles.
In a 8 inch square ( I used a 13x9 inch pan) layer the noodles and the sauce and then the cottage cheese. Divide the mozzarella cheese between the layers. repeat, ending with sauce. Sprinkle with the cheese.

Bake for 50 minutes or until lightly browned and bubbly.
